The Amangiri Pancake Recipe
We love it when people get their moment in the sun. In this case, that moment belongs to Chef Anthony Marazita at Amangiri. We get to cook with some of the most talented chefs in the world, but Chef Anthony is next level special. His range of cooking skills are vast yet deep. He creates Michelin-level dishes that combust and entertain you, to simple home cooking, that will make your swell. In the latter bucket is his Amangiri pancake recipe. We’ve shared this as the Best Pancake Recipe in the World, and now it’s having its moment again.
That moment is somewhat randomly because of a new travel show, The Reluctant Traveler. The show streams on Apple TV, and stars Eugene Levy, who we can only describe as brilliant. His deadpan humor is what makes the show engage you, along with the luxury hotels that are featured throughout. A visit to Amangiri doesn’t count unless you have the best pancake in the world, a la Chef Anthony. They don’t share the recipe, but luckily for you, we have the Amangiri pancake recipe, along with the secret ingredient, that takes it next level. Without further ado, here’s the Amangiri pancake recipe, that is not just for breakfast either.
Ingredients
Wet Mix
4 tablespoons Melted Butter
2 Whole eggs
3 cups Buttermilk
+ A Secret ingredient that will blow your mind
Dry Mix
2 cups All-Purpose flour
2 teaspoons Baking powder
3 tablespoons Sugar
1 teaspoon Baking soda
½ teaspoon Salt
Directions
First, place asmall cast iron pan inside your oven. A warm skillet is one of the details that will make a difference with the Amangiri pancake recipe. Or course it’s not a dealbreaker, but if you’re looking to make the best pancake, the details are everything. Preheat your oven to 450 degrees Fahrenheit.
Next, mix together the eggs and buttermilk, then add the melted butter in a slow stream. Continue to whisk the wet mix; this is also the set where you’ll add the secret ingredient.
In a separate large bowl, mix all the dry ingredients. Now, it’s time to combine the wet and dry ingredients, but do not overmix. You want your batter to remain lumpy.
Put on your oven mitt and carefully remove the cast iron from the oven. Spray your pan generously with non-stick cooking oil. Take a large ladle, and scoop the batter into the skillet. Only fill up your skillet half-way though, as the pancake will rise. Bake for 10-15 minutes until the pancake is golden brown on top. Make sure to test the center of the pancake with a toothpick. The Amangiri pancake recipe is just about done when the toothpick comes out clean. Gently turn the cast iron skillet over onto a towel or plate. Give it a love tap if needed, to release the pancake. Add in your favorite berries, top with syrup, and enjoy the Amangiri pancake.

We think it’s near impossible to guess the secret ingredient, even if you’ve been to Amangiri. This ingredient only highlights how brilliant Chef Anthony is. Otherwise, like all great chefs, the Amangiri pancake recipe is relatively straightforward.
